Description

This recipe is dedicated to Nat and Rachel, who inspire me to bake yummy things for their enjoyment.

This is a summer recipe from the wonderful seasonal cookbook Simply in Season.

 

Ingredients

  • 1 c flour
  • 3⁄4 c whole weat flour
  • 1⁄3 c baking cocoa
  • 1⁄2 t baking soda
  • 1⁄2 t salt
  • 3 c zuccini (shredded)
  • 1 egg
  • 3⁄4 c sugar
  • 3⁄4 c brown sugar
  • 1⁄2 c plain yogurt
  • 1⁄2 c oil
  • 1 t vanilla
  • 1 c semi sweet or mint chocolate chips
  • 1⁄2 c chopped nuts (optional)

Instructions

Combine the flour, whole wheat flour, baking cocoa, baking soda and salt in a large bowl.

Stir in the shredded zucchini.

Combine egg, sugar, brown sugar, plain yogurt, oil and vanilla in a seperate bowl and beat with a fork. Stir into zucchini mixture. Spread evenly into greased 9x13 inch pan.

Sprinkle chocolate chips and nuts on top of batter. Bake in preheated oven at 350F until toothpick inserted in center comes out clean, 35-40 minutes.

These brownies are delish!

For my embaressement I have never heard of zuccini before, but what can I say, the recipe sounds great especially the chocolate chips and the nuts sprinkled in the end. Oh, and I just bought some new frigidaire parts because it let me down when I most needed him - during the summer! I hope it'll be ok. :-s

 i love the potential to change the yield. the problem i had with the ingredient thingamabob was that there weren't enought little box guys for all of my ingredients, how did you fix that and get them all in there???

when I was testing it, I found that hitting submit, and possibly preview would bring up a second batch of boxes..

kind of a pain for large recipes, but the yield calculator makes it worth it.. its such a cool feature..

oh its totally worth the trouble to be able to get a computer to do the math im incapable of doing. my attempts to half recipes always turn out a little funky!

anyways now i know what to do for the next long recipe, thanks bunches!

I inputed the ingredients into the calculator part of it.. that way when someone changes the yield, it will update how much of each ingredient is needed (WICKED COOL!).   It will only display so many boxes, until you hit submit or preview, then more will display.
